The juice from this wine is drawn off after the de-stemmed grapes have been soaking in their own juices for about 6 hours. The wine is then cold settled racked and fermented cold. The grapes used were quite ripe so the rose is a little on the dark side, but one taste will convince that it is indeed a fine dry rose. It has clean nose and the taste reminds one of tart raspberries. Winemaker
